Happy Thursday, Deli Fans! Today, because we love you and want you to be happy, we bring you a special that has taken weeks of preparation to get just right. We started the curing process on a beautiful local pork belly a few weeks ago. Yesterday I judged it to be perfect, so it went on an all-night date with several kinds of apples and a generous slosh of hard apple cider in a warm oven. The resulting concoction is fall-apart tender, redolent with spices and complex apple sweetness, and is absolutely the perfect way to celebrate the return of sunshine to our lives.
